Recipe: Peanut Butter Energy Bites

If you’re looking for a quick and easy snack for fuel in between meals or before a workout, then these peanut butter energy bites are the perfect solution. This recipe takes just 15 minutes to make and produces 10-15 bites that are sure to satisfy your cravings for something sweet and energizing.


Ingredients

  • 1 cup quick oats

  • 1/3 cup old-fashioned oats

  • 1/3 cup vanilla whey protein powder

  • 1/2 cup creamy peanut butter

  • 1/3 cup honey

  • 1/3 cup mini chocolate chips (optional)

Instructions

In a large mixing bowl, combine the quick oats, old-fashioned oats, protein powder, and mini chocolate chips (if using).

Add the peanut butter and honey to the bowl and stir until well combined. The mixture should be sticky and hold together easily.

Using your hands, roll the mixture into balls about one inch in diameter. Place them on a plate or baking sheet lined with parchment paper.

Serve immediately, or store the energy bites in an airtight container in the refrigerator for up to one week. If you’re not planning to eat them right away, you can also freeze them for up to 3 months.

Variation Ideas:

If you want to mix things up and add some extra flavor and texture to your energy bites, here are some ideas for substitutions and additions:

  • Toasted Coconut Shavings: Add a bit of toasted coconut to the mixture for a tropical twist.
  • Cocoa Powder: For a chocolatey variation, substitute some protein powder for cocoa powder.
  • Dried Fruit: Add chopped dried fruit like raisins or cranberries for a sweet and chewy addition.
  • Chia Seeds: Add some chia seeds for extra protein and fiber.
