Recipe: Tomato Cucumber Salad
From burgers and hot dogs to corn and potato salad, there are staples guaranteed to be spotted at a Summer BBQ. While these classics are just that for a reason, there is one thing they’re all lacking — greens. Add an extra punch of vegetables with this healthy and refreshing summer recipe that the whole crowd will love! This quick and easy recipe is ready in just 10 minutes and yields about four servings.
For the Salad:
- 5 large tomatoes, quartered
- 1 cucumber, peeled and sliced
- 1/2 large red onion, sliced
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
For the Dressing:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon of kosher salt + 1 pinch of black pepper
- 1 garlic clove, minced
- 1 teaspoon honey
1 teaspoon of dried oregano
In a large mixing bowl, combine all of the salad ingredients.
In a separate bowl, whisk together all of the dressing ingredients until well blended.
Pour the dressing over the salad and toss together gently.
Cover the bowl with plastic and let sit at room temperature until ready to serve, or 1 to 3 hours. This allows the flavor to meld together.
Serve the salad and enjoy this healthier summer side dish!
You can add anything into this salad to make it your own! Here are some ideas for some additions:
- Feta cheese crumbles
- Fresh mozzarella cubes
- Diced avocado
- Almond slivers
- Dried cranberries
- Black olives
