Easy Ways to Eat More Vegetables
Getting in your daily veggies isn’t always easy—only about 10% of Americans actually achieve the recommended five servings a day. The truth is, life gets busy, and after a long day, chopping vegetables can feel like the last thing you want to do.
One strategy to help you get ahead during the week can be to prep ahead. One day a week to shop, wash, chop, and store veggies is all you need to incorporate a routine, so they’re ready when you are.
Once your veggies are ready to go, adding them to meals becomes effortless. Toss lettuce into a quick salad, snack on cucumbers or jicama with your favorite dip, or roast a colorful mix of broccoli, carrots, and peppers with olive oil and herbs.
A little planning means you’ll always have tasty, nutrient-packed vegetables at your fingertips—and eating healthy suddenly feels a whole lot easier.
